  • eggs - 4 item
  • vanilla - 1/2 tsp
  • pkg - 8 oz
  • milk - 2 Tbsp
  • butter - 2 Tbsp
  • water
  • coconut
  • oil - 1/4 c
  • powdered sugar
  • chopped walnuts - 1 c
  • yellow cake mix - 1 pkg
  • instant vanilla pudding - 1 pkg
  • Angel Flake coconut - 2 c
  • Stir in coconut and walnuts

How to make coconut cake:

Mix the first 5 ingredients. Stir in coconut and walnuts. Bake at 350° for 35 minutes. (Be sure to beat well the first 5 ingredients.)Icing:4 Tbsp. butter1 3/4 c. coconut2 Tbsp. butter8 oz. pkg. cream cheese2 Tbsp. milk3 1/2 c. powdered sugar1/2 tsp. vanilla Brown 4 tablespoons of butter and coconut over low heat. Spread paper towel over and let cool. Cream together 2 tablespoons of butter with cream cheese. Add milk, powdered sugar and vanilla, then add the cooked coconut. Sprinkle remaining 1/4 cup coconut over top of cake.
