Gazpacho
Ingredients/Components
- can stewed tomatoes - 1 item
- salt and pepper to taste - 1 item
- olive oil - 2 Tbsp
- green pepper, diced - 1 item
- small onion - 1 item
- diced tomatoes - 2 c
- crushed garlic clove - 1 item
- red pepper, diced - 1 item
- Tabasco sauce to taste - 1 item
- bottle tomato juice - 1 item
- red or white wine vinegar - 2 Tbsp
- dash of ground cumin - 1 item
- medium cucumbers, diced - 2 item
- juice of 1/2 lemon and 1 lime
- chopped fresh parsley or dried - 1/4 c
- to 3 diced scallions - 2 item
- each tarragon and basil - 1 tsp
How to make gazpacho:
Combine all ingredients and chill for at least 2 hours. Preparation time is 20 to 30 minutes.Optional: Puree about 1 1/2 cups of soup in blender to make a thicker base.
