Ingredients/Components

  • can stewed tomatoes - 1 item
  • salt and pepper to taste - 1 item
  • olive oil - 2 Tbsp
  • green pepper, diced - 1 item
  • small onion - 1 item
  • diced tomatoes - 2 c
  • crushed garlic clove - 1 item
  • red pepper, diced - 1 item
  • Tabasco sauce to taste - 1 item
  • bottle tomato juice - 1 item
  • red or white wine vinegar - 2 Tbsp
  • dash of ground cumin - 1 item
  • medium cucumbers, diced - 2 item
  • juice of 1/2 lemon and 1 lime
  • chopped fresh parsley or dried - 1/4 c
  • to 3 diced scallions - 2 item
  • each tarragon and basil - 1 tsp

How to make gazpacho:

Combine all ingredients and chill for at least 2 hours. Preparation time is 20 to 30 minutes.

Optional: Puree about 1 1/2 cups of soup in blender to make a thicker base.
