  • vanilla extract - 1 tsp
  • salt - 1/4 tsp
  • baking powder - 1/2 tsp
  • baking soda - 1/2 tsp
  • large egg - 1 item
  • all-purpose flour - 1 c
  • raisins - 1/2 c
  • quick cooking oatmeal
  • ground cinnamon - 1 tsp
  • granulated fructose - 2 Tbsp
  • solid margarine, softened 1 stick - 1/2 c
  • granulated sugar replacement or 1/8 tsp - 1 c

How to make raisin oatmeal cookies:

Combine flour, cinnamon, baking powder, baking soda and salt in a bowl. Stir to mix. Combine margarine, fructose, egg and vanilla in a mixing bowl. Beat until thoroughly blended. Beat in sweetener of your choice. Gradually add flour mixture. Beat until blended. Meanwhile, combine oatmeal and raisins in a bowl. Work with your fingers or a spoon to separate the raisins and coat them with the oatmeal. Beat into cookie mixture. Drop by tablespoonfuls onto an ungreased cookie sheet. Bake at 375° (190°C) for 10 to 12 minutes. Cool slightly on cookie sheet, then move to cooling rack.
