Zucchini muffins
Ingredients/Components
- sugar - 1 c
- eggs - 2 item
- chopped pecans - 1/2 c
- vanilla extract - 1 Tbsp
- salt - 1/2 tsp
- baking powder - 1/4 tsp
- baking soda - 1 tsp
- vegetable oil - 1/2 c
- all-purpose flour - 2 c
- raisins - 1 c
- ground cinnamon
- unpeeled, shredded zucchini - 2 c
How to make zucchini muffins:
Combine first 4 ingredients, mixing well. Stir in shredded zucchini; set mixture aside. Combine next 5 ingredients in a mixing bowl. Reserve 1/4 cup flour mixture and toss with raisins and pecans.Make a well in center of flour mixture. Add zucchini mixture to dry ingredients, stirring just until moistened. Stir in raisins and pecans.
Spoon mixture into greased muffin pans, filling 2/3 full. Bake at 350° for 20 minutes. Makes about 2 dozen.
