  • sugar
  • vanilla extract - 1 tsp
  • salt - 1 tsp
  • chopped nuts - 1/2 c
  • water - 1 c
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • shortening - 1 c
  • all-purpose flour
  • raisins - 2 c
  • eggs, lightly beaten - 2 item
  • ground cinnamon - 1/2 tsp
  • ground nutmeg - 1/2 tsp

How to make soft raisin cookies:

Combine raisins and water in a small saucepan; bring to a boil. Cook for 3 minutes, remove from heat and let cool (do not drain). In a mixing bowl, cream shortening, gradually add sugar. Add eggs and vanilla. Combine dry ingredients, gradually add to creamed mixture and blend thoroughly. Stir in nuts and raisins. Drop by teaspoons 2 inches apart on a greased baking sheet. Bake at 350° for 12 to 14 minutes.
