Soft raisin cookies
Ingredients/Components
- sugar
- vanilla extract - 1 tsp
- salt - 1 tsp
- chopped nuts - 1/2 c
- water - 1 c
- baking powder - 1 tsp
- baking soda - 1 tsp
- shortening - 1 c
- all-purpose flour
- raisins - 2 c
- eggs, lightly beaten - 2 item
- ground cinnamon - 1/2 tsp
- ground nutmeg - 1/2 tsp
How to make soft raisin cookies:
Combine raisins and water in a small saucepan; bring to a boil. Cook for 3 minutes, remove from heat and let cool (do not drain). In a mixing bowl, cream shortening, gradually add sugar. Add eggs and vanilla. Combine dry ingredients, gradually add to creamed mixture and blend thoroughly. Stir in nuts and raisins. Drop by teaspoons 2 inches apart on a greased baking sheet.
