Chocolate-covered cherry cookies
Ingredients/Components
- all-purpose flour
- unsweetened cocoa powder - 1/2 c
- baking powder - 1/4 tsp
- baking soda - 1/4 tsp
- salt - 1/4 tsp
- margarine, softened - 1/2 c
- sugar - 1 c
- egg - 1 item
- vanilla
- jars maraschino cherries - 2 oz
- pkg - 1 oz
- sweetened condensed milk - 1/2 c
How to make chocolate-covered cherry cookies:
In a large mixing bowl, stir together flour, cocoa, baking powder, soda and salt; set aside. In a large mixing bowl, beat margarine with an electric mixer on medium speed 30 seconds. Add sugar and beat on low until fluffy. Add egg and vanilla; beat well. Gradually add flour mixture to beaten mixture, beating on low until well blended.Shape dough into 1-inch balls. Place these 2 inches apart on cookie sheet. Press down center of each ball with thumb. Drain maraschino cherries, reserving the juice.
In a small saucepan, melt chocolate chips and sweetened condensed milk over low heat, stirring often. Stir in 4 teaspoons reserved cherry juice. Spoon 1 teaspoon of this frosting over each cherry to cover. Bake at 350° for about 10 minutes.
