Pumpkin roll



  • sugar - 1 c
  • cinnamon - 1 tsp
  • cream cheese
  • eggs - 3 item
  • vanilla - 1 tsp
  • flour - 3/4 c
  • baking soda - 1 tsp
  • powdered sugar - 1 c
  • chopped walnuts - 1 item
  • margarine - 2 Tbsp
  • cooked pumpkin - 2/3 c

How to make pumpkin roll:

Filling:1 (8 oz.) cream cheese1 c. powdered sugar2 Tbsp. margarine1 tsp. vanilla Preheat oven to 375°. Grease jelly roll pan. Beat eggs with sugar. Add flour, cooked pumpkin, baking soda and cinnamon. Mix well. Pour into well-greased pan. Sprinkle with chopped walnuts. Bake at 375° for 10 to 15 minutes. When cake has baked, turn onto a clean towel sprinkled with powdered sugar. Roll up like a jelly roll. Cool completely in towel.

Cream well filling ingredients. When cake has cooled, unroll and spread with filling mixture. Carefully roll up tightly. Wrap in foil and refrigerate or freeze.
