  • eggs - 3 item
  • sugar - 1 c
  • pumpkin - 2/3 c
  • baking soda - 1 tsp
  • cinnamon - 1/2 tsp
  • flour - 3/4 c
  • margarine
  • cream cheese - 8 oz
  • vanilla - 3/4 tsp
  • powdered sugar - 1 c

How to make pumpkin roll:

Filling:2 Tbsp. margarine8 oz. cream cheese3/4 tsp. vanilla1 c. powdered sugar Cake: Spread evenly on cookie sheet which is lined with greased foil. Sprinkle with 1/2 cup chopped nuts (optional). Bake at 375° for 15 minutes. Turn immediately onto a towel which is sprinkled with powdered sugar; roll up in towel. Let cool. A large can of pumpkin makes 4.

Filling: Mix together ingredients. Add 2 to 3 tablespoons milk to soften. Carefully unroll cake from towel. Spread with filling and reroll. Wrap in plastic wrap and refrigerate. This freezes very well.
