Pumpkin roll
Ingredients/Components
- eggs - 3 item
- sugar - 1 c
- pumpkin - 2/3 c
- lemon juice - 1 tsp
- flour - 3/4 c
- baking powder - 1 tsp
- ginger - 1 tsp
- nutmeg - 1/2 tsp
- cinnamon - 2 tsp
- chopped walnuts - 1 c
- cream cheese - 8 oz
- butter - 4 Tbsp
- powdered sugar - 1 c
- vanilla - 1 tsp
How to make pumpkin roll:
Line jelly roll pan with waxed paper. Beat eggs 5 minutes. Add sugar, pumpkin and lemon juice and mix well. Sift flour, baking powder, ginger, nutmeg and cinnamon together and fold into pumpkin mixture. Spread batter evenly in pan and sprinkle with walnuts. Bake at 375° for 15 minutes or until springs back when touched.Have damp towel ready. Turn jelly roll pan over on towel, dropping cake onto towel, and roll up. Cool for 1 1/2 hours.
Unroll towel. Mix cream cheese, butter, powdered sugar and vanilla. Spread over cake. Roll up again and sprinkle with powdered sugar.
