Ingredients/Components
- salt - 1/8 tsp
- plain low-fat yogurt - 2 Tbsp
- chopped celery - 1/2 c
- dash of pepper - 1 item
- minced onion - 1 tsp
- sugar optional
- prepared yellow mustard - 1 tsp
- reduced-calorie mayonnaise - 1 Tbsp
- egg, hard-cooked and chopped - 1 item
- peeled, cooked potato, cut in cubes and chilled - 4 oz
- diced drained canned pimiento - 1 Tbsp
How to make potato salad:
In medium bowl, combine egg, potato, celery, pimiento and onion. In small bowl, combine remaining ingredients, mixing thoroughly. Pour yogurt mixture over potato mixture and toss gently to coat. Cover with plastic wrap and refrigerate for at least 1 hour. Makes 1 serving.Recipe categories: Salads, Side dish, Potato.
