Potato salad
Ingredients/Components
- sugar - 1/4 c
- salt - 1/4 tsp
- water - 1/4 c
- vinegar - 1/4 c
- eggs, well beaten - 2 item
- chopped celery - 1/2 c
- prepared mustard - 1 tsp
- dash of pepper - 1 item
- salad dressing - 1 c
- minced onion - 1 Tbsp
- hard-boiled eggs - 2 item
- cooked cubed potatoes - 4 c
How to make potato salad:
Combine vinegar, water, sugar, salt, pepper and mustard. Bring to a boil. Reduce heat; gradually beat in well beaten eggs. Cook, stirring constantly, until slightly thickened, about 5 minutes. Beat in salad dressing. Toss together remaining ingredients. Pour on dressing. Toss gently. Adjust seasoning, if necessary. Makes 6 servings.Recipe categories: Salads, Side dish, Potato.
