Sour cream potato salad
Ingredients/Components
- sour cream - 1/2 c
- salt
- lemon juice - 1 Tbsp
- pepper - 1/2 tsp
- hard-boiled eggs, chopped - 4 item
- mayonnaise - 2/3 c
- medium potatoes - 6 item
- sweet pickle relish - 1/4 c
- Italian salad dressing - 1/4 c
- celery, sliced - 1/2 c
- jar dried pimiento, drained - 1 oz
How to make sour cream potato salad:
Wash potatoes and cook in boiling salted water to cover 30 minutes or until tender; drain and cool completely. Peel and cube potatoes; combine potatoes, eggs and celery in large bowl; toss gently. Combine mayonnaise, sour cream, salad dressing, lemon juice, salt and pepper in small bowl; stir well. Pour over potato mixture, tossing gently. Cover and chill thoroughly.
