  • pkg - 1/2 oz
  • milk - 1 2
  • butter or margarine - 1 Tbsp
  • beaten egg - 1 item
  • grated Parmesan cheese - 1/4 c
  • dash of pepper - 1 item
  • chopped green onions - 1 Tbsp
  • medium potatoes, peeled and quartered - 3 item
  • envelope instant onion soup mix - 1/2 item
  • coarsely crushed cornflakes or shredded wheat

How to make potato balls:

In saucepan, cook potatoes in boiling unsalted water about 20 minutes or until tender. Drain and mash. Stir in Parmesan cheese, cream cheese, butter or margarine, green onion, onion soup mix and pepper. Mix well. Add 1 to 2 tablespoons milk if mixture is dry. Shape mixture into 8 balls. Dip in beaten egg and roll in cornflakes. Place on greased baking sheet. Bake at 400° for 10 to 15 minutes or until hot and crispy.

Recipe can easily be doubled; extra baked potato balls can be frozen, then reheated in the microwave.
