Ingredients/Components

  • cornstarch - 2 tsp
  • cold water - 1/2 c
  • lemon juice - 1 tsp
  • garlic powder - 1/4 tsp
  • pepper - 1/8 tsp
  • can chicken broth - 1 item
  • bay leaf - 1 item
  • olive oil - 2 tsp
  • sliced carrots - 2 c
  • white cooking wine - 1/4 c
  • dried parsley - 1 tsp
  • dried thyme - 1/2 tsp
  • mushrooms, halved - 1 c
  • boneless pork, cubed - 1 lb
  • frozen, whole, small onions, halved - 2 c

How to make pork and mushroom stew:

In a large saucepan, brown pork, half at a time, in olive oil. Return all meat to pan. Stir in chicken broth, wine, parsley, thyme, garlic powder, pepper and bay leaf. Simmer, covered, for 40 minutes. Add frozen onions, carrots and mushrooms. Simmer another 20 minutes or until vegetables are tender. Remove bay leaf. Combine cold water and cornstarch. Add to stew with lemon juice. Cook and stir until thickened and bubbly. Makes approximately 4 servings.
