Ingredients/Components

  • sugar - 1/4 c
  • cinnamon - 1 tsp
  • vanilla - 1 tsp
  • milk - 1/4 c
  • salt - 1/2 tsp
  • baking powder
  • egg - 1 item
  • butter or margarine, melted - 1/4 c
  • plums - 2 lb
  • all-purpose flour, sifted before measuring
  • butter or regular margarine - 1/4 c

How to make plum kuchen:

Topping:1/4 c. sugar1 tsp. cinnamon1/4 c. butter or margarine, melted Preheat oven to 400°. Grease a 13 x 9 x 2-inch baking pan or dish. Wash plums; drain. For easier slicing, cut each plum in half, then cut each half into 4 slices to measure 4 1/2 cups.

Into medium bowl sift flour with 1/4 cup sugar, baking powder and salt. With fork or pastry blender, cut in 1/4 cup butter until mixture resembles coarse crumbs. In small bowl beat egg slightly with fork, then add milk and vanilla, blending well with fork. Add to flour mixture, beating vigorously with fork until smooth, about 1 minute. Batter will be quite stiff. Using spatula or rubber scraper spread batter evenly over bottom of prepared pan. Arrange plum slices over batter to cover. Place this, sides down, slightly overlapping in 5 parallel rows. Place any extra slices between rows.

Topping: Mix sugar, cinnamon and melted butter. Spoon over fruit. Bake 35 minutes or until fruit is tender and pastry golden.
