Ingredients/Components

  • milk - 1 item
  • salt - 1 tsp
  • flour
  • butter - 2 Tbsp
  • pepper - 1 item
  • grated cheese - 1/2 c
  • large potatoes - 3 item
  • can tuna - 7 oz
  • small onion, chopped - 1 item
  • chopped parsley - 2 Tbsp
  • Bake in hot oven about 1 hour or until soft

How to make tuna stuffed potatoes:

Wash potatoes and rub skin with oil. Bake in hot oven about 1 hour or until soft. Cut each potato in half and scoop out into a bowl, keeping shells intact. Mash hot potatoes; add butter, onion, salt and pepper to taste. Add enough milk to make potatoes soft and fluffy. Heap into skins, building up sides and leaving hole for tuna mix.Creamed Tuna Filling:3 Tbsp. butter2 1/2 Tbsp. flour1/2 tsp. salt1 c. milk7 oz. can tuna1/2 c. grated cheese2 Tbsp. chopped parsley Melt butter and blend in flour and salt; stir in milk and cook until mixture boils and is thickened. Drain tuna; break into bite size cubes. Add sauce along with parsley to tuna. Fill potatoes with creamed tuna and sprinkle with cheese. Return to oven for 10 minutes at 350° or until cheese melts.
