  • butter or margarine - 3 4
  • chopped nuts - 1/3 c
  • firmly packed brown sugar - 1/2 c
  • maraschino cherries - 4 item
  • small can pineapple slices, drained - 1 1/2
  • box one-layer yellow cake mix - 1 oz

How to make pineapple upside-down cake:

Preheat oven to 350°. Melt butter in bottom of 8 x 8 x 2-inch square baking pan. Sprinkle with brown sugar and arrange pineapple rings. Sprinkle with nuts.

In a large mixing bowl, prepare cake mix according to package directions. Scrape side of bowl as necessary. Pour batter over fruit. Bake 40 to 50 minutes or until toothpick inserted in center of cake comes out clean.

Invert cake onto serving dish. May be served warm or cool. This will make 1 (8-inch) square layer cake.
