Ingredients/Components
- rounded cornstarch - 2 Tbsp
- sugar - 1/2 c
- salt - 1/2 tsp
- crushed pineapple - 1 can
- egg yolks and whites, separated - 2 item
- fresh lemon juice - 1 Tbsp
How to make pineapple pie:
Mix first 3 ingredients in saucepan; add pineapple. Cook until clear and thick on very low heat, 6 to 8 minutes, stir occasionally. Mix a little pineapple at a time to egg yolks very slowly, cook 1 minute. Cool slightly and add lemon juice. Pour in baked pie shell and top with meringue; seal well.Meringue: Beat egg whites until foamy, add 4 tablespoons sugar a little at a time, beat until stiff. Bake at 425° until meringue is brown.
