Pineapple cake
Ingredients/Components
- sugar - 2 c
- vanilla - 1 tsp
- milk - 1 c
- cornstarch - 3 Tbsp
- eggs, separated - 4 item
- stick butter - 1/2 item
- egg, well beaten - 1 item
- butter or other shortening - 1 c
- sifted cake flour I use self-rising - 3 c
- salt omit if using self-rising - 1/4 tsp
- baking powder omit if using self-rising - 3 tsp
- Beat egg whites until stiff, but not dry
How to make pineapple cake:
Cream shortening and sugar until fluffy. Beat egg whites until stiff, but not dry. Add egg yolks 1 at a time to shortening and sugar, beating thoroughly after each one added. Sift dry ingredients together and add alternately with milk and vanilla to creamed mixture, beating until smooth after each addition. Fold in stiffly beaten egg whites. Pour into pans (greased) and bake at 350° for 25 minutes or until toothpick inserted comes out clean.Pineapple Filling:1 large can crushed pineapple (in heavy syrup)1 c. sugar1/2 stick butter3 Tbsp. cornstarch1 egg, well beaten Combine all ingredients and cook on medium heat until thick.
