  • sugar - 1 c
  • shortening - 1/2 c
  • flour, sifted - 1 c
  • rolled oats - 1/2 c
  • persimmon pulp - 1 c
  • baking soda - 1 tsp
  • salt - 1 tsp
  • baking powder - 1 tsp
  • raisins - 1 c
  • chopped walnuts - 1 c
  • vanilla - 1 tsp

How to make persimmon pudding:

Cream sugar and shortening together. Thoroughly blend soda into persimmon pulp. Add flour and rolled oats. Blend. Add salt, baking powder, raisins, nuts and vanilla. Mix well. Pour batter into greased 2-quart casserole. Cover. Bake at 300° for 1 1/2 hours.
