Raisin spice cookies
Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- eggs - 2 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- flour - 4 c
- water - 3/4 c
- nutmeg - 1/4 tsp
- baking powder - 1 tsp
- baking soda - 1 tsp
- shortening - 1 c
- chopped walnuts - 1 c
- raisins - 1 c
- allspice - 1/4 tsp
How to make raisin spice cookies:
Put raisins and water in a saucepan. Cover and bring to a boil. Reduce heat to low and allow to steam for 5 minutes. Drain raisins; retain 1/2 cup liquid. Immediately put baking soda into liquid. (This will cause bubbling action, so be sure to use 1 cup measure.)Cream sugar and shortening together. Add vanilla and eggs, mixing well. Combine flour, salt, baking powder and spices together. Alternately add the liquid and dry ingredients to the creamed mixture, mixing well after each addition. Stir in raisins and nuts.
Drop by 1/2-teaspoons onto greased cookie sheets. Bake at 350° for ten minutes or until light brown. Makes about 6 dozen cookies.
