Pepper steak with rice
Ingredients/Components
- cornstarch - 2 Tbsp
- water - 1/4 c
- margarine - 2 Tbsp
- paprika - 1 Tbsp
- cloves garlic, minced - 2 item
- beef broth
- sliced scallions - 1 c
- green peppers, cut into strips - 2 item
- sauce - 1/4 c
- shoulder steak, cut 1/2-inch thick - 1 lb
- tomatoes, cut into eights or 4 carrots, peeled and sliced - 2 item
How to make pepper steak with rice:
Soften steak by pounding until thin. Cut into 1/4-inch wide strips. Sprinkle meat with paprika and allow to stand while preparing other ingredients.In a 10-inch skillet, brown meat in margarine. Add garlic and broth; cover and simmer 30 minutes. Stir in scallions and green peppers. Cook, covered, for an additional 15 minutes.
In a small bowl, blend cornstarch, water and soy sauce. Pour into meat mixture, stirring constantly until clear and thickened, about 2 minutes. Add tomatoes or carrots and stir gently. Serve over rice.
