Peanut brittle
Ingredients/Components
- vanilla - 1 tsp
- granulated sugar - 1 c
- butter or margarine - 1 tsp
- salt - 1/8 tsp
- baking soda - 1 tsp
- raw peanuts - 1 c
- white corn syrup - 1/2 c
How to make peanut brittle:
Stir together the peanuts, sugar, corn syrup and salt in 8-cup measure. Place in microwave and cook on High 7 to 8 minutes, stirring well, after 4 minutes. (Wooden spoon can be left in bowl.) Add butter and vanilla to syrup, blending well. Return to microwave and cook 1 minute more. Peanuts will be lightly browned and syrup very hot. Add baking soda and gently stir until light and foamy. Pour and spread mixture quickly onto lightly greased (flexible) cookie sheet; let cool 1/2 hour.When cool, break into small pieces. May be stored in airtight container.
