Peaches 'n crumb cake
Ingredients/Components
- sugar - 1/4 c
- cinnamon - 1/2 tsp
- salt - 1/2 tsp
- nutmeg - 1/4 tsp
- unsifted flour
- firmly packed brown sugar - 1/4 c
- oleo - 2 Tbsp
- yeast - 1 pkg
- softened oleo - 2 Tbsp
- very hot water - 1/2 c
- egg, at room temperature - 1 item
- can or 1 to 2 c - 1 oz
How to make peaches 'n crumb cake:
Combine 1/2 cup flour, sugar, salt and undissolved yeast. Add 2 tablespoons softened oleo and hot tap water to dry ingredients. Beat 2 minutes at medium speed. Add egg and 1/2 cup flour. Beat on high speed 2 minutes. Stir in 1/2 cup flour. Spread batter in greased 9 x 9 x 2-inch pan.Combine 1/2 cup flour, brown sugar, nutmeg and cinnamon. Cut in 2 tablespoons oleo until crumbly. Sprinkle over cake. Arrange peach slices on top. Cover and let rise about 1 hour or until double in bulk in a warm place. Bake at 400° for 25 minutes or until done. Cool in pan 10 minutes. Remove and cool on wire rack, if desired. Drizzle with confectioners icing (1/2 cup confectioners sugar and 1 tablespoon water or milk). Double for a 9 x 13-inch pan.
