Peach preserves

Ingredients/Components

• sugar - 5 c
• firm ripe peaches, peeled and sliced - 2 qt

How to make peach preserves:

Combine peaches and sugar in a heavy pot and let stand overnight. Bring to a boil, stirring frequently. Boil gently until fruit becomes clear and syrup is thick. Stir often to prevent sticking. A dash of lemon juice will help taste and prevent sugar crystals forming. Pour into hot sterilized jars and seal.
