Ingredients/Components
- cornstarch - 1 Tbsp
- vegetable oil - 2 Tbsp
- chicken broth - 1/2 c
- cloves garlic, crushed - 2 item
- minced cilantro - 2 Tbsp
- hot cooked white rice - 3 c
- can black beans, undrained - 1 oz
- lime wedges optional - 1 item
- sliced red, green, yellow peppers, 1-inch wide - 2 c
- sprigs of cilantro optional - 1 item
How to make black bean sauce:
In large skillet, heat oil over moderately high heat. Add peppers and garlic; saute 5 minutes, stirring frequently with wooden spoon. Stir in beans and minced cilantro.
