Ingredients/Components
- sugar - 1/2 c
- cinnamon - 1/2 tsp
- pkg - 2 oz
- salt - 1 tsp
- flour
- nutmeg - 1/2 tsp
- cold water - 4 Tbsp
- vegetable oil - 1 item
- vinegar - 1 tsp
- shortening - 1 c
- lemon juice - 2 Tbsp
- egg, beaten - 1 item
How to make peach fried pies:
Egg Pastry:3 c. flour1 tsp. salt1 c. shortening1 egg, beaten4 Tbsp. cold water1 tsp. vinegar Cook peaches per package directions. Drain, mash and combine with sugar, lemon juice and spices. Set aside.Egg Pastry: Combine dry ingredients. Cut in shortening. Add egg. Sprinkle the water and vinegar over flour mixture. Stir. Form into ball. Chill 1 hour. Roll out and cut in 5-inch rounds (use saucer). Place 3 tablespoons peach mixture on pastry round. Fold and press edges together with fork to seal. Fry in 1-inch of hot oil at 375° until golden brown on each side, turning only once. Drain on paper towels.
