Pasta with vegetables
Ingredients/Components
- broccoli flowerets - 2 c
- large carrot - 1 item
- zucchini - 1 item
- 3 color pasta curls - 8 oz
- sliced mushrooms - 1/4 lb
- sliced green onions - 1/3 c
- cloves garlic, minced - 3 item
- dried thyme - 1/4 tsp
- Parmesan cheese - 3 Tbsp
- margarine - 2 3
- sharp Cheddar, shredded - 1/2 3/4
- oil polyunsaturated - 2 Tbsp
How to make pasta with vegetables:
Cut carrot and zucchini in julienne strips. Cook broccoli, carrots and zucchini in water for 4 minutes. Cook pasta according to package directions. In large skillet, heat oil and saute mushrooms, green onions, garlic and thyme until tender. Combine vegetables, pasta and onion mixture; mix well. Add margarine and Parmesan cheese.
