Ingredients/Components
- butter or margarine - 2 Tbsp
- salt - 1/2 tsp
- dairy sour cream - 1/2 c
- heavy cream - 1/2 c
- butter or margarine, melted - 1/2 c
- hot water - 1/4 c
- butter, melted - 2 Tbsp
- paprika - 1/4 tsp
- pepper - 1/4 tsp
- chopped onion - 1 Tbsp
- dash of pepper - 1 item
- minced onion - 1/4 c
- chicken breasts - 4 item
- poultry seasoning - 1/4 tsp
- dry bread crumbs - 2 c
- enriched flour - 1/4 c
- recipe Mushroom Sauce - 1 item
- Combine flour, 1/2 teaspoon salt, paprika and dash of pepper in a paper bag
How to make party chicken:
Split chicken breasts just enough to fold. Combine flour, 1/2 teaspoon salt, paprika and dash of pepper in a paper bag. Add chicken and shake to coat.For Stuffing: Combine bread cubes, onion, 1/2 teaspoon salt, poultry seasoning and pepper. Add 2 tablespoons butter and hot water. Toss gently to moisten.
Fill cavity of each piece of chicken with stuffing. Hold stuffing in by skewering opening shut with toothpicks. Dip chicken in 1/2 cup melted butter. Place in baking dish. (Drizzle any remaining butter over top.) Bake in slow oven (325°) 45 minutes or until tender. Sprinkle with chopped parsley. Serve with Mushroom Sauce.Mushroom Sauce:1/2 lb. fresh mushrooms, cut in half1/4 c. minced onion2 Tbsp. butter or margarine1 to 2 Tbsp. enriched flour1/2 c. heavy cream1/2 c. dairy sour cream1/2 tsp. salt1/4 tsp. pepper Cook mushrooms and onion lightly in butter until tender, but not brown. Cover and cook 10 minutes over low heat. Push mushrooms to one side and stir flour into butter. Add heavy cream, sour cream and seasonings. Heat slowly, stirring constantly, almost to boiling point. Makes about 1 1/2 cups.
