Onion shortcake
Ingredients/Components
- sugar - 1/4 c
- sour cream - 1 c
- butter - 1/2 c
- grated cheese - 2 c
- onion, chopped - 1 item
- can cream-style corn - 1 item
- "Cinch" cornbread mix - 1 item
How to make onion shortcake:
Prepare cornbread mix according to directions, omitting eggs. Add sugar and creamed corn. Pour into greased 9 x 13-inch pan. Mix sour cream and 1 cup grated cheese. Saute onion in the butter and pour, while hot, into sour cream mixture. Mix thoroughly. Pour sour cream mixture very carefully over the cornbread. Sprinkle remaining cup of cheese over the top. Bake at 425° for 30 minutes.This is delicious served with chili.
