Okra etouffee
Ingredients/Components
- salt - 3/4 tsp
- vegetable oil - 1/4 c
- pepper - 1/8 tsp
- medium onion, chopped - 1 item
- crushed potato chips - 3/4 c
- sliced fresh or frozen okra - 3 c
- can diced tomatoes and green chilies, drained - 1 oz
- medium size green bell pepper, chopped - 1 item
- fine dry breadcrumbs - 1/4 c
How to make okra etouffee:
Place okra in a lightly greased 1 1/2-quart baking dish; drizzle with oil. Top with tomatoes and green chiles, onion and bell pepper; sprinkle with salt and pepper. Cover loosely with aluminum foil. Bake at 400°, stirring occasionally, 1 hour. Stir together potato chips and breadcrumbs; sprinkle over casserole. Bake, uncovered, 15 more minutes or until lightly browned.
