Ingredients/Components

  • salt - 3/4 tsp
  • vegetable oil - 1/4 c
  • pepper - 1/8 tsp
  • medium onion, chopped - 1 item
  • crushed potato chips - 3/4 c
  • sliced fresh or frozen okra - 3 c
  • can diced tomatoes and green chilies, drained - 1 oz
  • medium size green bell pepper, chopped - 1 item
  • fine dry breadcrumbs - 1/4 c

How to make okra etouffee:

Place okra in a lightly greased 1 1/2-quart baking dish; drizzle with oil. Top with tomatoes and green chiles, onion and bell pepper; sprinkle with salt and pepper. Cover loosely with aluminum foil. Bake at 400°, stirring occasionally, 1 hour. Stir together potato chips and breadcrumbs; sprinkle over casserole. Bake, uncovered, 15 more minutes or until lightly browned. Serve over rice, if desired. YIELD: 6 servings.
