Mexican corn bread
Ingredients/Components
- eggs - 2 item
- buttermilk - 1 c
- ground beef - 1/2 lb
- can cream-style corn - 1 item
- bacon drippings - 1/4 c
- self-rising cornmeal - 1 c
- onion optional - 1 item
- to 4 jalapeno peppers - 3 item
- grated cheese American or Cheddar - 2 c
How to make mexican corn bread:
Mix meal, bacon drippings, eggs, milk and corn. Brown beef with onion; drain. Layer 1/2 of the batter in an 8 x 12-inch baking pan (greased). Put beef on batter. Sprinkle peppers and 1 cup cheese on beef. Top with remaining batter and 1 cup cheese. Bake at 350° for 1 hour.Recipe categories: < 4 hours, Breads, Mexican.
