Ingredients/Components
- cinnamon - 1 tsp
- eggs - 2 item
- chopped pecans - 1/2 c
- brown sugar - 1 c
- baking soda - 1/2 tsp
- melted butter - 1/2 c
- boiling water
- shredded coconut
- self-rising flour
- white sugar - 1 c
- raw oats - 1 c
- Topping:3/4 stick butter or margarine room temperature
How to make oatmeal cake:
Topping:3/4 stick butter or margarine (room temperature)3/4 c. brown sugar1 1/2 c. shredded coconut Pour 1 1/4 cups boiling water over oats and let set for 20 minutes. Combine brown sugar, white sugar, melted butter, eggs, flour, cinnamon, nuts and baking soda. Mix until smooth. Add oats and mix. Bake in a 375° oven until toothpick comes out clean, 40 to 45 minutes.Mix topping. Put on cake and bake in oven under broiler until coconut is light brown.
