Ingredients/Components

  • cinnamon - 1 tsp
  • eggs - 2 item
  • vanilla - 1 tsp
  • chopped pecans - 1 c
  • salt - 1/2 tsp
  • flour - 2 c
  • brown sugar - 1 c
  • butter - 1/2 c
  • evaporated milk - 1/3 c
  • nutmeg - 1 tsp
  • coconut - 1 c
  • baking soda - 1 tsp
  • boiling water
  • oatmeal - 1 c
  • white sugar - 1 c
  • margarine or butter, melted - 1/2 c

How to make oatmeal cake:

Mix the water and oatmeal. Let set for 20 minutes.

Cream the butter with sugars. Beat in the eggs and the soaked oatmeal. Combine the remaining ingredients and stir into oatmeal mixture. Turn into greased and floured 13 x 9 x 2-inch pan. Bake in 350° oven for 35 minutes or until done. Cool in pan and spread with Coconut-Pecan Topping.

Coconut-Pecan Topping: Combine all ingredients and top baked cake.
