Ingredients/Components
- sugar - 3/4 c
- cinnamon - 1 tsp
- eggs - 2 item
- vanilla - 1 tsp
- milk - 1/4 c
- salt - 1/2 tsp
- flour
- stick margarine - 1 item
- brown sugar - 1/2 c
- nutmeg - 1/2 tsp
- coconut - 1 c
- baking soda - 1 tsp
- boiling water
- margarine
- oatmeal - 1 c
- light brown sugar - 3/4 c
- walnuts - 1/2 c
How to make oatmeal cake:
Frosting:6 Tbsp. margarine1/4 c. milk1/2 c. sugar1/2 c. brown sugar1/2 tsp. vanilla1 c. coconut Mix together water, oatmeal and margarine. Let stand 20 minutes. Beat together eggs and sugars. Sift together dry ingredients and add to egg mixture. Add oatmeal mixture and mix well. Add walnuts and stir. Cook in 1 1/2-quart oblong glass Pyrex dish at 350° for 40 minutes.Frosting: Beat together all ingredients, except coconut. Stir in coconut. Put on cake and cook cake with frosting an additional 6 minutes. Remove and enjoy.
