Ingredients/Components

  • cinnamon - 1 tsp
  • eggs - 2 item
  • vanilla - 1 tsp
  • evaporated milk
  • egg yolks - 3 item
  • coconut
  • soda - 1/2 tsp
  • boiling water
  • shortening - 1/2 c
  • nuts - 1 c
  • stick butter - 1 item
  • light brown sugar - 1 c
  • white sugar - 1 c
  • quick oats - 1 c
  • sifted flour self-rising

How to make oatmeal cake:

Topping:1 c. evaporated milk1 stick butter3 egg yolks1 c. white sugar1 tsp. vanilla1 c. nuts1 1/3 c. coconut Cake: Pour water over oats and allow to stand covered for 20 minutes. Cream shortening, brown sugar and white sugar. Add eggs and beat well. Add the oat mixture and beat. Add flour, cinnamon and soda. Mix and pour into 2 (8-inch) pans that have been greased and floured. Bake about 30 minutes at 350°.

Frosting: Combine first 5 ingredients and cook about 12 minutes or until thick. Remove from heat and add nuts and coconut. Mix well; cool and spread on cake.
