Ingredients/Components

  • sugar - 1 c
  • cinnamon - 1/2 tsp
  • eggs - 2 item
  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • chopped nuts - 1 c
  • flour
  • brown sugar - 1 c
  • nutmeg - 1/2 tsp
  • egg yolks - 2 item
  • coconut
  • soda - 1 tsp
  • boiling water
  • shortening - 1/2 c
  • light brown sugar - 1 c
  • quick oats - 1 c
  • Cream shortening, brown sugar and white sugar

How to make oatmeal cake:

Soak oats in boiling water and let cool. Cream shortening, brown sugar and white sugar. Add eggs and vanilla to creamed mixture. Sift flour, soda, cinnamon, salt and nutmeg together. Alternate the adding of oats mixture, shortening and sugar. Baked in an 11 x 13-inch greased pan at 350° for 25 minutes.Topping For Oatmeal Cake:1 stick margarine1 c. brown sugar1 1/4 c. coconut1 c. chopped nuts2 egg yolks Cream margarine and brown sugar. Add egg yolks, coconut and nuts. Spread over cake. Turn oven on broil at 400° and return cake to oven for 5 minutes (watch closely).
