New potatoes with lemon butter
Ingredients/Components
- butter or margarine - 1/2 c
- salt - 1 item
- boiling water - 1 item
- lemon juice - 3 Tbsp
- small new potatoes - 3 lb
- finely snipped chives, parsley or mint - 2 Tbsp
How to make new potatoes with lemon butter:
Scrub potatoes. Pare a strip of skin, about 1/2-inch wide, around center of each potato. Place potatoes in medium saucepan. Add boiling water to measure 2 inches and 1/2 teaspoon salt. Bring to boiling; boil gently, covered, for 20 minutes or until tender. Drain. Return to heat for several minutes to dry out. Melt butter in a small saucepan. Stir in lemon juice, snipped chives and 1/2 teaspoon salt. Pour over potatoes, turning to coat well. Turn into serving dish. Makes 8 servings.Recipe categories: Lunch/snacks, Side dish, Potato.
