Lemon meringue pie

Ingredients/Components

• sugar - 1 c
• butter or margarine - 2 Tbsp
• salt - 1/4 tsp
• cornstarch - 4 Tbsp
• eggs, separated - 3 item
• boiling water
• lemon juice - 3 Tbsp
• grated lemon rind

How to make lemon meringue pie:

Blend egg yolks, cornstarch, salt, sugar, lemon rind and juice. Add to boiling water, stir over low heat until thick. Add butter. Pour into a baked pie crust; top with meringue made with egg whites. Return to oven to brown.
