Ingredients/Components

  • salt - 1/2 tsp
  • butter - 1/4 c
  • pepper - 1/4 tsp
  • Velveeta cheese, cubed - 1/2 c
  • eggs, slightly beaten - 2 item
  • large chopped onion - 1 item
  • cans sliced mushrooms - 2 oz
  • finely crushed saltine crackers - 1 c
  • light cream half and half - 1/2 c

How to make mushroom casserole:

Preheat oven to 350°. Saute onion in butter; drain mushrooms, reserving 3/4 cup of liquid. Combine eggs, cream, mushrooms and liquid, spices and saltines; add onion and cheese and mix well. Pour into a greased 1 1/2-quart casserole. Bake covered for 30 minutes. Remove cover and continue baking for 30 minutes more.
