Mixed vegetable salad
Ingredients/Components
- sugar - 3/4 c
- pkg - 1 oz
- cornstarch - 1 Tbsp
- vinegar - 1/2 c
- chopped onion - 1/2 c
- chopped celery - 1/2 c
- chopped green pepper - 1/2 c
- can kidney beans, rinsed and drained - 1 oz
How to make mixed vegetable salad:
Cook the mixed vegetables on the stove or in microwave until tender. Drain; place in a large bowl. Add kidney beans, celery, onion and green pepper.In a saucepan, over medium heat, bring sugar, vinegar and cornstarch to a boil, stirring constantly, until thickened. Cool slightly. Pour over vegetables and toss. Refrigerate. Yields 8 servings.
