Ingredients/Components

  • salt
  • water - 2 c
  • oil - 1 Tbsp
  • egg, beaten - 1 item
  • chopped onion - 1/2 c
  • chopped fresh parsley - 1/4 c
  • chopped celery - 1/2 c
  • chili powder - 1/2 tsp
  • can stewed tomatoes - 1 lb
  • hamburger - 1/2 lb
  • cloves garlic - 4 item
  • lemon pepper - 1 tsp
  • uncooked rice - 2 Tbsp
  • cans beef broth - 2 oz

How to make mexican meatball soup:

Mash 1 clove garlic and combine with beef, egg, 1/2 teaspoon salt, rice, chili powder and 2 tablespoons parsley. Shape into small meatballs. Dice remaining garlic; cook in 2-quart pan in oil along with onion until tender. Add remaining salt, water, broth, celery and lemon pepper. Bring to boil. Reduce heat. Drop in meatballs. Simmer 20 minutes. Add tomatoes and parsley. Simmer another 30 to 45 minutes. Serves 4.
