  • salt
  • water - 3 c
  • egg, beaten - 1 item
  • pepper - 1/8 tsp
  • chopped onion - 1/2 c
  • chopped celery - 1/2 c
  • prepared mustard - 2 tsp
  • green pepper - 1/2 c
  • uncooked rice - 1/2 c
  • ground chuck
  • sour cream optional - 1/3 c
  • mushroom soup mix - 1 pkg

How to make porcupines in mushroom sauce:

Combine uncooked rice with ground meat, onion, green pepper, celery, egg, mustard, salt and pepper. Mix well. Form into 1 1/2-inch balls. Place in 9 x 13-inch baking dish. Combine mushroom soup mix with water and heat to boiling. Pour over meatballs. Cover tightly and bake in 350° oven for 1 hour. Remove and stir in sour cream. Serves 6 generously.
