Mexican cornbread casserole



  • sugar - 1/4 c
  • flour - 1/2 c
  • egg - 1 item
  • ground beef - 1 lb
  • can cream of mushroom soup - 1 item
  • onion - 1 item
  • small jar pimento - 1 item
  • or 2 small jalapeno peppers - 1 item
  • Cornbread Mix:1 small can cream corn

How to make mexican cornbread casserole:

Cornbread Mix:1 small can cream corn1/4 c. sugar1/2 c. flour1 egg Saute beef and onion. Add pimento, soup and peppers. Set aside. Mix cream of corn, sugar, flour and egg. Grease a cast-iron frying pan. Put half of cornbread mixture in bottom of frypan. Add beef mixture on top of cornbread. Spread remaining cornbread on top. Top with grated cheese if desired. Bake at 400° for 15 minutes. Reduce heat to 300° and bake 45 to 55 minutes.
