Ingredients/Components
- sugar - 2 tsp
- salt - 1/2 tsp
- eggs, beaten - 2 item
- margarine - 2 Tbsp
- plus 2 Tbsp - 1/4 c
- grated onion - 2 tsp
- black pepper - 1/8 tsp
- grated uncooked yellow squash - 2 c
How to make squash patties:
Combine first five ingredients in a bowl. Cover and let stand 30 minutes. Add flour and eggs. Stir well. Melt margarine over medium heat. Drop squash mixture by tablespoons into hot margarine. Cook until golden brown, turning once. Yields 6 to 8Recipe categories: Breads, Vegetables, North american.
