- ground beef - 1 lb
- medium onion - 1 item
- to 3 chopped jalapeno peppers - 2 item
- sharp Cheddar cheese - 1 lb
- corn meal
- milk - 1 c
- baking soda - 1/2 tsp
- salt - 3/4 tsp
- eggs - 2 item
- can cream-style corn - 1 item
- bacon drippings - 1/4 c
How to make mexican cornbread:
Batter:1 c. corn meal1 c. milk1/2 tsp. baking soda3/4 tsp. salt2 eggs1 can cream-style corn1/4 c. bacon drippings Mix batter. Pour half batter mixture into greased casserole dish. Add a layer of cheese, meat, onion and peppers. Pour remaining batter on top of layers. Bake at 350° for 45 to 50 minutes.Recipe categories: Breads, Quick breads, North american.
