  • medium onion - 1 item
  • to 3 chopped jalapeno peppers - 2 item
  • sharp Cheddar cheese - 1 lb
  • corn meal
  • milk - 1 c
  • baking soda - 1/2 tsp
  • salt - 3/4 tsp
  • eggs - 2 item
  • can cream-style corn - 1 item
  • bacon drippings - 1/4 c

How to make mexican cornbread:

Batter:1 c. corn meal1 c. milk1/2 tsp. baking soda3/4 tsp. salt2 eggs1 can cream-style corn1/4 c. bacon drippings Mix batter. Pour half batter mixture into greased casserole dish. Add a layer of cheese, meat, onion and peppers. Pour remaining batter on top of layers. Bake at 350° for 45 to 50 minutes.
