Mexican cornbread
Ingredients/Components
- eggs - 2 item
- salt - 3/4 tsp
- cornmeal - 1 c
- ground beef - 1 lb
- onion, chopped - 1 item
- can cream-style corn - 1 item
- cheese, grated - 12 oz
- sweet milk - 1 c
- jalapeno peppers, chopped - 2 item
How to make mexican cornbread:
Mix cornmeal, corn, milk, eggs and salt. Set aside. Cook ground beef and onion until well done (not brown); turn off heat. Add grated cheese and peppers. Mix well. Grease skillet and brown a small amount of cornmeal in bottom to prevent sticking. Pour in 1/2 of batter; spoon ground beef mixture over this. Add balance of batter.
