Mexican cornbread
Ingredients/Components
- sugar - 1 Tbsp
- salt - 1 tsp
- flour - 1 c
- buttermilk - 1 c
- eggs, beaten - 2 item
- baking powder - 2 Tbsp
- baking soda - 1/4 tsp
- cornmeal - 1 c
- grated Cheddar cheese - 1 c
- chopped green onions - 2 item
- chopped pimentos - 2 Tbsp
- can creamed corn - 1 item
- chopped jalapeno peppers - 2 item
- chopped bell peppers - 2 Tbsp
- bacon drippings or oil - 2 Tbsp
How to make mexican cornbread:
Beat eggs; set aside. Mix all dry ingredients together. Then add creamed corn, beaten eggs, the buttermilk and then chopped ingredients. Stir all together. Fold in cheese.
