  • sugar - 1 Tbsp
  • salt - 1 tsp
  • flour - 1 c
  • buttermilk - 1 c
  • eggs, beaten - 2 item
  • baking powder - 2 Tbsp
  • baking soda - 1/4 tsp
  • cornmeal - 1 c
  • grated Cheddar cheese - 1 c
  • chopped green onions - 2 item
  • chopped pimentos - 2 Tbsp
  • can creamed corn - 1 item
  • chopped jalapeno peppers - 2 item
  • chopped bell peppers - 2 Tbsp
  • bacon drippings or oil - 2 Tbsp

How to make mexican cornbread:

Beat eggs; set aside. Mix all dry ingredients together. Then add creamed corn, beaten eggs, the buttermilk and then chopped ingredients. Stir all together. Fold in cheese. Bake in a greased and floured sheet pan or in muffin tins at 400° for about 30 minutes.
