Mexican cornbread
Ingredients/Components
- milk - 1 c
- salt - 1/2 tsp
- flour - 1 c
- baking powder - 4 tsp
- vegetable oil - 1/4 c
- egg - 1 item
- grated cheese - 8 oz
- ground meat - 1 lb
- yellow cornmeal - 1 c
- medium onion, chopped - 1 item
- green pepper, chopped - 1 item
- can cream-style corn - 1 item
- taco seasoning - 1 pkg
- small carton sour cream - 1 item
- bacon drippings - 2 Tbsp
How to make mexican cornbread:
Combine cornmeal, flour, salt and baking powder. Add milk, egg, oil and melted bacon drippings. Beat until fairly smooth. Add the cream-style corn and sour cream. Mix. Brown ground meat, onion and green pepper. Drain and combine with the taco seasoning. Pour half of the cornbread mixture into a 9 x 13-inch casserole. Put meat mixture over this and then grated cheese. Pour remaining cornbread mixture over meat layer. Bake at 400° for about 35 to 40 minutes.Recipe categories: Breads, Quick breads, North american.
