  • milk - 1 c
  • salt - 1/2 tsp
  • flour - 1 c
  • baking powder - 4 tsp
  • vegetable oil - 1/4 c
  • egg - 1 item
  • grated cheese - 8 oz
  • ground meat - 1 lb
  • yellow cornmeal - 1 c
  • medium onion, chopped - 1 item
  • green pepper, chopped - 1 item
  • can cream-style corn - 1 item
  • taco seasoning - 1 pkg
  • small carton sour cream - 1 item
  • bacon drippings - 2 Tbsp

How to make mexican cornbread:

Combine cornmeal, flour, salt and baking powder. Add milk, egg, oil and melted bacon drippings. Beat until fairly smooth. Add the cream-style corn and sour cream. Mix. Brown ground meat, onion and green pepper. Drain and combine with the taco seasoning. Pour half of the cornbread mixture into a 9 x 13-inch casserole. Put meat mixture over this and then grated cheese. Pour remaining cornbread mixture over meat layer. Bake at 400° for about 35 to 40 minutes.
