Mexican cornbread
Ingredients/Components
- milk - 1 c
- salt - 3/4 tsp
- soda - 1/2 tsp
- cornmeal - 1 c
- chopped onion - 1 c
- grated Cheddar cheese - 1/2 lb
- eggs, slightly beaten - 2 item
- bacon drippings - 1/2 c
- canned cream-style corn - 2 c
- jalapeno pepper, seeded and chopped fine - 1 item
How to make mexican cornbread:
Mix all ingredients using 1/4 cup of the bacon drippings. Heat remaining 1/4 cup bacon drippings in square 9-inch baking pan. Add batter. Bake for 45 to 50 minutes. May take longer if altitude is high.Recipe categories: Breads, Quick breads, North american.
