Ingredients/Components

  • milk - 1 c
  • salt - 3/4 tsp
  • soda - 1/2 tsp
  • cornmeal - 1 c
  • chopped onion - 1 c
  • grated Cheddar cheese - 1/2 lb
  • eggs, slightly beaten - 2 item
  • bacon drippings - 1/2 c
  • canned cream-style corn - 2 c
  • jalapeno pepper, seeded and chopped fine - 1 item

How to make mexican cornbread:

Mix all ingredients using 1/4 cup of the bacon drippings. Heat remaining 1/4 cup bacon drippings in square 9-inch baking pan. Add batter. Bake for 45 to 50 minutes. May take longer if altitude is high.
